Mixed vegetable paneer sandwich | TummyKhush

A lot of us crave for a yummy sandwich. A hot sandwich with a nice cup of coffee is a good option for a late sunday brunch or a late night qucik bite. Sandwiches can be toasted, grilled or simply made on the age old tawa. With a range of options for fillings both veg and non veg, sandwiches make for a healthy filling meal. When pressed for time, you can simply put a few slices of tomatoes or cucumbers or the very humble omelette for a quick grab n go snack.

So come Saturday night and with the IPL semi finals of Hyderabad vs. Bangalore, I decided to make a nice game night snack. I made the filling before hand so as to avoid the last minute rush so that me and my husband could enjoy a night Tv snack. And Aditya being a great fan of paneer, I chose Paneer as the main stuffing ingredient for the sandwich. I used the sandwich maker to grill the sandwiches. You can also do it on the tawa, making sure that you press the slices together properly so that they get cooked evenly. I also used  a mix of veggies like peas, mushrooms, corn, carrot etc. It is a healthy option and to be frank, you wouldnt be so guilty of bingeing when you put in so many veggies :P. Stuffing options can vary. It is just a question of experimenting with the ingredients.

Here are the ingredients I used to make 4 sandwiches:

Brown bread or a bread of your choice: 2 slices per sandwich.

For the stuffing:

Oil or butter : for cooking the stuffing.

Paneer : 1 cup
Garlic: 2 to 3 cloves finely chopped
Onion: 1 small sliced into rings.
Green chillies : slit and chopped 3 to 4 or according to taste
Carrot: 1 small grated
Peas: 1/2  small cup boiled slightly in salt water and kept aside
American sweet corn: 1/2 small cup boiled slightly in salt water and kept aside.
Button mushrooms: 4 – 5 sliced
You can also add veggies like mushrooms or use potatoes as a base instead of paneer. Just boil the potatoes, mash and use instead of the paneer.
Spring onions – 2 to 3 stalks chopped roughly (if available)
Coriander – chopped for garnish.
Dhania powder : 1/4 tsp
Jeera powder  : 1/4 tsp
Salt: according to taste
Chopped corainder for garnish

To assemble the sandwich:
Tomato sauce or any other sauce of your choice
Green chutney (Indian spicy dip made out of mint leaves, corinader and a variety of ingredients. You can refer to my recipe “Chatpata sandwich pakoras” for a detailed green chutney recipe)
Grated cheese optional
Butter optional

Heat oil or butter in a kadhai.
When the oil/butter is sufficiently hot, add the garlic and let it brown slightly.
Add the green chillies and let them fry.
Now add the onions and saute till they start changing the colour. We need to keep the onions crispy to give a nice texture to the sandwiches.

Add the peas and corn to the mixture and keep stirring. We need to allow them to cook slightly.
Add the mushrooms and stir for some more time. Add the grated carrots and mix well. We need the veggies to cook slightly but still be firm.
Now add the salt, dhania powder, jeera powder. You can add any other masalas according to your taste.
Adjust seasoning. You can add some freshly ground pepper too.
Add the spring onions and corinader. Stir well and keep aside.

Butter each bread slice on one side. Spread the sauces on one slice and green chutney on the other.
Spread the mixture on one of the slices. Spread the grated cheese on the stuffing.
Now press the slices  together.
Put the sandwich in the sandwich maker or a griller or an oven and toast them. You can aslo use a non stick pan or tawa. In the case of tawa, toast the sandwich on one side. Turn the sandwich carefully without spilling the contents and toast on the other side too. This toast on the other side too. This will make sure that the sandwich is evenly cooked.

Serve with a dip or a sauce of your choice.
